    when I mix my ingredients I found it better to mix all the loose ingredients together before mixing with the meat. One thing that I did different was add some diced jalapeños. Made for a nice taste.

    I can see the value of scoring the fat cap. You can get the marinade in there, plus each little cube turns into a little burnt end. I am going to try this flavor profile for sure. Naan bread or pita would be great to serve it in. And, don't forget the onions.

    Just a thought. Old school.....leave the membrane on.....I know, everybody these days says to take it off, that way the seasoning can penetrate the underside as well. ..B,S. just leave it on, you'll be glad you did.

      Yeah, I cook 500 racks of ribs a year, typically always leave it on. Lol. Just doing on rack, I have no problem taking it off. Especially with babybacks.
